Next weekend Mark and I are going camping. Half the trip will be with some good friends and half the trip will be on our own.
It's only 4 nights and neither of us have been seriously camping in a LOOONNNNGGGG time!! But we knew we would want to go together when we were married so registered at REI for our wedding and then loaded up on necessary supplies using gift cards afterwards.
Here's my question, what are some good camping meals, tricks of the trade, or items you think are absolutely necessary when you camp?

here are some of my easy fav's.. but they all are kinda not good for you! :(
*haystacks for sure!! cans of chili over frito's. i know, it is not good for your body.. but its easy and yummy!!
*mac-n-cheese over the campfire. SO good!
*anything in a can is GREAT! (beans, fruit, etc.)..just remember the can opener... hee hee!
*fish to cook over the fire. its easier than hot dog/hamburgers cuz you don't need the buns and condiments. its more money, tho! :(
*we usually bring dried fruit, nuts, and a big bag of carrots to snack on.. and belive it or not, you CAN make brownie's over a campfire!!

Rather than using cans, try some of the dehydrated meals. Some of them are quite good and all you need is a pot and hot water. But if you want to really do basic camping, take the cans and just open them and put them on the fire to heat up.
I guess it depends on how close the campsite is to your car. If it's close, you can do the whole bit, but if you have to hike any distance, the dehydrated stuff is a LOT easier to carry.
When Becky and Jesse were little we used to go camping. We spent one week up at Clear Lake one summer. We got a piece of dry ice for one cooler that I used to keep some things frozen. The other cooler had regular ice for the perishables. If you have a camp stove and some cookware, there isn't much you can't prepare!

Kenny and I had the pleasure of going camping this past week, and these are two things that worked really well for us. I made these in advance and put them in tupperware:
Green chile stew - can you get green chile up there? If you can, and you're interested, let me know. I'll send you my recipe. It's SO easy, really hearty and mmm, put a little shredded cheese and you're golden.
Breakfast burritos. All I did was cook some sausage and scramble some eggs together. Then, it's really easy to warm up the egg mixture, throw a tortilla on the coleman burner, then assemble with some cheese. You could also bake some tater tots ahead of time, but they'd take longer to warm up.

Too late for you to need this recipe but our favorite recipe is "Hobo Stew" (I know, not politically correct, but oh well.) In foil you wrap up hamburger or turkey meat, shredded cheese, hashbrowns, onions, seasonings and bbq sauce. Throw into the fire to cook. :) Delicious!
